Around 2013, I remember brewing naturals like Aricha from David Haugaard, Guji from Johan & Nyström, and those beautiful roasts by Per Nordby at DaMatteo. That was when I really fell for Ethiopian naturals — and honestly, 15 years later, nothing has changed.This new lot from Shoondhisa in Shakiso, produced by Ture Waji, ticks every single box for me. It opens with delicate florals that flow into crisp, grape-like acidity.
