Description
Grown at 1,850 metres above sea level in Huila, this SL28 lot comes from Edinson Argote at his family run farm, Quebraditas. Edinson is known for combining careful cherry selection with controlled fermentation techniques to shape expressive and distinctive cup profiles. After harvesting only fully ripe cherries, the coffee undergoes an extended oxidation phase before being slowly fermented with selected yeasts under controlled temperatures. The cherries are then carefully dried in stages to stabilise the sugars and structure developed during fermentation.
