We're delighted to have the much requested Sumava Black Moon back on our list! This process is similar to natural processing, except that the coffee rests slightly longer before being left out to dry. Some say the name comes from the coffee being harvested during a full solar eclipse. While we can’t be sure about the name’s origin, what we do know is that the process results in a delicious cup.
