We rarely source coffees from Sumatra, where the traditional wet-hulled process tends to create earthy, savoury, and herbaceous profiles. This method, designed for high-humidity conditions, accelerates drying by removing parchment while beans are still moist—essential in a climate where slow, even drying is challenging.
