Description
The technique of "Monsooning" coffee happened accidentally in the deep of sailing ships bound for Europe. The coffee acquired a mellow yet unique taste en route, with the coffee beans 'swelling' due to the moisture in the air whilst also losing some of their natural acidity. Indian coffee growers use this same basic technique to create Indian Monsoon Malabar coffee; once picked the coffee beans are exposed to the moist, salty monsoon winds in the Indian state of Kerala.
